So for some, this may now be the most nutritious meal considering 95% of this is from then the freezer but, like I have expressed before I find it 100 times easier to buy freezer vegetables and fish. Why? Sometimes I change my mind in what I want and as my husband and I have very different preferences in relation to food it suits us well to buy our own things.
Before going shopping today I checked my freezer and was horrified to find that I had so much unused veg which varied of Brussels Sprouts, Broccoli, Cauliflower, Corn on the Cob, Peas, Sugar Snap Peas and Mushrooms. So, I wrote out a list of how long, considering if I follow portion sizes, the veg should last me for. I will post how I estimated what I use in a later post. My aim is to try live off of €30 a week…again, this is for another post 🙂
So, daily…fingers crossed yet again 🙂 I will post pictures of my breakfast, lunch and dinner and explain how I cooked it. For today’s dinner It peeled and boiled one potato for 10 minutes. I added a little pinch of salt and pepper. Once the potatoes were cooked a little I put them in a bowl with 2 tablespoon of extra virgin olive oil, a shake of salt and pepper and a little garlic granules (to taste). I made sure it was very well coated and mixed well and transferred to a oven dish. I than weighted out 80g of Brussels sprouts and cauliflower. I placed them in a bowl with 2 tablespoon of extra virgin olive oil, salt and pepper to taste, garlic granules to taste again making sure it was very well mixed and coated. I transferred the veg to the same dish as the potato. I placed everything in the oven for 30 minutes, turning and flipping half way after 15 minutes.
The only thing I added after was I made a quick tartar sauce.I did 1 tablespoon of mayonnaise, 1 squirt of yellow mustard and one dash of lemon juice. I think if you like your veg and potatoes crispier, leave in for an extra 10 minutes, but they were done to my liking this time. Have a nice evening and happy cooking !!!
