Hey guys, so today I was in the mood for something naughty but nice haha. I have always loved butter cookies. They normally remind me of Christmas, however the ones we used to have had no chocolate chips and had sugar on top. So I guess you could call them Sugar cookies :). So, here is the recipe I used with pictures of my creations and some slight adjustments as some of them went a little pair shaped as I was trying out my cat cookie cutters.
I started with adding a cup of butter to a food processor. Then I added 1 cup of sugar and roughly 2 teaspoons of vanilla essence and 1 egg.
You should ensure that you mix these until you have a fluffy consistency and everything is mixed together very well. It should look something like …
Once you have the fluffy mixture, make sure to transfer to a mixing bowl and slowly add 2 and half cups of self-raising flour. Mix together (chocolate chips are optional at this stage) with your hands and once you are satisfied, place in fridge for 2 hours to firm up.
Pre-heat the oven for 200 degrees Fahrenheit. It’s recommended to put the cookies on a baking sheet, but I used the below dish as I found the butter in the recipe helped it not stick. I would not recommend greasing the tin. They went into the oven like this. I was super excited to see what it would look like after it was cooked, however after 8 minutes, it turned into a mess. The all blended together and the ones that didn’t turned out too fat and didn’t resemble the way the went in :(. It can happen but you just have to rethink what can you do to save it and make it look more presentable then what it did look like.
So I rounded them out and stuck them into the oven and they turned out way better thankfully. The husband seems to really enjoy them and I love them too so that is all that matters.
